How To Make Gluten Free Apple Cider Donuts

  1. In a small saucepan, add 1 1/2 cups of  apple cider. Bring to a boil then simmer for 15 – 20 minutes or until the liquid is reduced to roughly about a 1/2 cup. Set aside to cool (about 20 minutes, or you can make this the night before)
  2. Preheat your oven to 350 degrees F and spray your donut pan with non stick spray, set aside.
  3. In a medium mixing bowl, whisk together your apple cider, egg, vanilla extract and almond milk.
  4. In a large mixing bowl, whisk together your almond flour, tapioca flour, coconut flour, sugar, baking powder, cinnamon, and nutmeg. Pour your wet ingredients into your dry ingredients and mix together until well incorporated.
  5. Spoon or pipe the mixture into the donut pan. Fill it about 3/4 full.
  6. Once your donuts are out of the oven mix together your coating and once your donut are warm but cool enough to touch, coat them in your cinnamon sugar mix. If you have any trouble getting it to stick you can brush your donut with melted butter. Enjoy!
