Packed with apple cider flavor, cinnamon and nutmeg. This healthy baked donut recipe is perfect for the fall! It is gluten-free, keto, dairy free, and sugar free. But don't worry - they don't taste healthy! This makes for an absolutely perfect fall and autumn treat and is ready in no time at all! Fall always makes me think of a nice crisp apple and these donuts bring that flavor right to you but in the form of a baked good! The cinnamon 'sugar' coating is completely perfect for this flavor of donut - I can't get enough!

I am honestly still in shock over how heathy these are! Each donut comes in at only 68 calories, just 3 grams of net carbs and 1 gram of naturally occurring sugar! This recipe is perfect to bring to any potlucks, get togethers, brunch, bring them into the office, or to keep on hand for whenever that craving hits! These even keep very well in the freezer so don't worry if you need to make them a head of time!

I think this recipe is also perfect if you have having a Halloween party; perfectly handheld, delicious, and easy to make! This recipe is kid and adult approved! Who is getting excited for Halloween? Ingredients

  • 1 1/2 cups apple cider
  • 2 eggs
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 1/4 cup tapioca flour
  • 1 tbs coconut flour
  • 1/4 cup stevia or monk fruit
  • 2 tsp baking powder
  • 1 tbs ground cinnamon
  • 1 tsp ground nutmeg

Coating:

  • 1/4 cup monk fruit
  • 1 tsp ground cinnamon

Instructions

  1. In a small saucepan, add 1 1/2 cups of  apple cider. Bring to a boil then simmer for 15 – 20 minutes or until the liquid is reduced to roughly about a 1/2 cup. Set aside to cool (about 20 minutes, or you can make this the night before)
  2. Preheat your oven to 350 degrees F and spray your donut pan with non stick spray, set aside.
  3. In a medium mixing bowl, whisk together your apple cider, egg, vanilla extract and almond milk.
  4. In a large mixing bowl, whisk together your almond flour, tapioca flour, coconut flour, sweetener, baking powder, cinnamon, and nutmeg. Pour your wet ingredients into your dry ingredients and mix together until well incorporated.
  5. Spoon or pipe the mixture into the donut pan. Fill it about 3/4 full.
  6. Once your donuts are out of the oven mix together your coating and once your donut are warm but cool enough to touch, coat them in your cinnamon sugar mix. If you have any trouble getting it to stick you can brush your donut with melted butter. Enjoy!
