As you can see, I am on an apple kick right now and I am LIVING for it! I seriously recommend the honey crisp apples for this one because they are SO good, and the brown butter cream cheese icing is the perfect touch of a nutty and caramely taste to the icing that serious elevates these apple cinnamon rolls. I can't get enough of these! These are the absolute best eaten warmed up.

I am not going to lie, I seriously did something here. I officially have a new favorite kind of cinnamon buns, and it is apple cinnamon flavored. I can't wait for you to try these! If you have never browned butter before I do recommend doing a quick search to make sure you do it properly and don't end up burning your butter, because that browned butter seriously makes these apple cinnamon rolls. Ingredients

Cinnamon Roll Dough:

  • 1 1/2 cups plus 2 tbs tapioca flour
  • 3/4 cup almond flour
  • 1 tbs xanthan gum
  • 1 tbs baking powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, melted
  • 3 tbs monk fruit
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbs warm water

Filling:

  • 2 honey crisp apples, peeled and chopped
  • 1/2 cup golden monk fruit
  • 1/4 cup monk fruit
  • 1 tbs ground cinnamon
  • 6 tbs unsalted butter, room temperature

Icing:

  • 1/2 cup cream cheese, room temperature
  • 2 tbs unsalted butter, room temperature
  • 2 tsp vanilla extract
  • 1/2 cup powdered monk fruit

Instructions

  1. Preheat your oven to 350 degrees F and grease a pie dish or small casserole dish.
  2. In a large bowl, whisk together your tapioca flour, almond flour, xanthan gum, baking powder, and salt.
  3. In a separate bowl combine your melted butter, sweetener, eggs, and vanilla extract.
  4. Add your wet ingredients to your dry mixture and mix until combined, your dough will be sticky. I found my stand mixer with the paddle attachment was the easiest.
  5. Add 2 tbs warm water to your dough and mix well. Let your dough rest for 5 minutes to firm up. While your dough rests mix together all of your filling ingredients and set aside.
  6. On a large silicone baking mat or piece of parchment paper, spread about 1 tbs of tapioca flour so it covers about 8X12 inches. Take your dough and place it on your working surface and roll your dough with a rolling pin into a 8X12 even rectangle.
  7. Spread your filling mixture evenly over your dough, leaving at least a 1/2 inch around the edges.
  8. Using the short side (the 8 inch side) carefully roll your dough rectangle into a log. Cut into about eight equal pieces. Place your rolls in your greased dish and bake for 22-26 minutes.
  9. In a small saucepan, brown your butter by cooking it for about 5 minutes, until just browned. Combine your cream cheese, brown butter, vanilla extract, and powdered monk fruit in the bowl of a stand mixer and whisk until nice and smooth. Once your cinnamon rolls slightly cool, spread your topping on top and enjoy!
