Here it is guys, the best ever moist and delicious gluten free, dairy free, sugar free banana bread recipe! How can that be possible you ask? Well, it took me a couple tries to get this one right - but I’ve got it AND it is incredibly easy to make!

Be sure to let the banana bread cool enough before you take it out of your loaf pan, otherwise it will fall apart. now, I KNOW how hard that is - when the aroma of delicious banana bread hits your nose and fills your house how can you not dig in as soon as it comes out of the oven, right? WRONG. Leave it. It’s worth the wait. Trust me. Ok, now that we are done with discussing that - let’s talk about all the different ways you can and will enjoy this banana bread! You can eat it as is (totally delicious), heated up just a little bit in the microwave and buttered up (how my boyfriend enjoys his banana bread), spread some peanut butter (or any nut butter) on top, if you have some homemade chocolate hazelnut spread on hand you need to spread it on this banana bread! This banana bread is super duper yummy and what makes it even better is that each slice comes in at only 157 calories and has 6 whole grams of muscle building protein, and only 9 grams of net carbs! Woohoo!

Ingredients

  • 3 very ripe bananas
  • 3 large eggs
  • 1 tbs vanilla extract
  • 1/4 cup monk fruit
  • 2 cups almond flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • Optional: 1/2 cup sugar free chocolate chips

Instructions

  1. Preheat oven to 350 degrees F, prepare a 8x4 loaf pan by placing parchment paper in your pan or greasing dish.
  2. In a large bowl mash your bananas, add in your eggs and vanilla extract. Mix until combined.
  3. In a medium bowl, mix together your almond flour, baking soda, salt, and cinnamon until combined.
  4. Pour your dry mixture into your banana mixture and whisk until just combined - do not overmix. Fold in your chocolate chips if you are adding them.
  5. Pour batter into your prepared loaf pan and place in your preheated over for 40-50 minutes, or until a toothpick inserted into the middle comes out clean. Allow your banana bread to cool for 30 minutes before taking out of pan. Allow to cool completely on a cooling rack before slicing. Enjoy!
