·

Simple and easy blueberry jam, the delicious flavor of the blueberries takes center stage with this 3 ingredient jam recipe. There is no added sugar in this blueberry jam, it is keto friendly and vegan! Honestly, this Blueberry Jam is so good! It is amazing topped on some toast, put it on a dessert, or top a cake with it. This Blueberry Jam Recipe is versatile and delicious. My personal favorite way to eat it is on top of a fresh slice of some amazing cheesecake. And yes, that is hint towards what an upcoming recipe is - wink wink. So get excited for that, it is coming at you next week!

This recipe is seriously so easy to make and you can have it whipped up in just ten minutes, then all you have to do is place it in your fridge until you ready for some fresh, homemade Blueberry Jam! What makes this recipe so great you ask? Well, let me tell you! Not only is it only three ingredients, but each serving comes in at just 29 calories, only five grams of naturally occurring sugar, and only six grams on net carbs! Woohoo! It does get any better than this! I had leftover blueberries just sitting in my fridge from my White Chocolate Blueberry Scone recipe and I just knew I had to whip something up with them. I don't really enjoy just eating blueberries on their own and I could not have this amazing fresh fruit go to waste - so of course I whipped up some super easy jam with it!

How amazing does this jam look?! I can't get enough of it - which is really saying something because blueberries have never been my favorite fruit. I could eat so much toast if this jam is on it! If you love this Blueberry Jam you will also love my favorite jam recipe ever - Strawberry Jam! It is just as easy to whip up and also just three ingredients so make sure to check that out because you can never have too much jam! What fruit should we turn into jam next? Let me know what your favorite kind is, I love me some jam! Plus, when you read all of the added ingredients in the store bought stuff how can you not whip some up yourself when it is this easy?

So, I guess I should say happy Monday! And it will be a happy one because how could it not be with some fresh jam to get excited about? I am starting to ramp up for some fall recipes - but I decided I am going to hold on to summer for as long as I can so I have vowed to myself that I will not be sharing any fall inspired recipes until at least the first official day of fall. So, mark your calendars because I have a ton of ideas and recipes coming your way to warm you up on those brisk days. Ok, that is all the talk I have in me about fall - I am still basking in this summer sun and I still can't get enough of it! I need to soak up a few more lake days before the weather turns.

Ingredients

  • 1 pound fresh blueberries
  • 2 tsp lemon juice
  • 1/4 cup stevia or monk fruit

Instructions

  1. In a saucepan over medium-high heat stir your blueberries and lemon juice
  2. Cook for 10-15 minutes, stirring occasionally. As your blueberries start to break down you can use a wooden spoon or masher to make your blueberry chunks smaller if desired.
  3. Now, add in your sweetener and stir until combined and it has dissolved.
  4. Carefully pour your jam into a glass jar to store in the fridge - don't worry it will start to thicken into a jam like consistency as it cools. Enjoy!
