Healthy Blueberry Muffins

Happy Monday everyone! Let’s start our week off the right way with the most delicious bakery style blueberry muffins! Once you try these you will be shocked that they are paleo, have zero added sugar, and are gluten free! I am not going to lie, I am VERY proud of how these blueberry muffins turned out and will be bragging about them for months, maybe years to come. Once you try them, you will be doing the same.

The mashed banana in these blueberry muffins adds the absolute perfect touch of sweetness and keeps your blueberry muffins nice and moist, I seriously can’t get enough!

I did not use any muffin liners in my muffin tin this time around, I still cannot find the plain white ones in the size that I want! It is driving me nuts, but that is ok because that liner would just get in the way of me devouring these delectable blueberry muffins. Honestly, I am not a fan of blueberries. Never have been. BUT THESE BLUEBERRY MUFFINS GOT ME! Seriously, I might need to add these to my weekly baking schedule - they are just THAT good! I also prefer to use fresh blueberries in this recipe, however if it is easier for you to use frozen then just go for it and let me know how it turns out!

What are you up to this week? Any plans to get out and enjoy the beautiful weather? I am working at my office job all week but I will get out after work and walk the dog so that we can both enjoy the beautiful sun. I have booked 2 weeks off this summer in July and I am already counting down the days, I honestly have never taken 2 full weeks off before. Why? I couldn’t tell you! I am starting to realize that taking time off for myself to relax and unwind is just amazing for my mental health. Do you have plans to take some time off this summer? If so, what are your plans? I am having a stay-cation and I am very excited! If you do not take any time off in the Summer, do you take it at a different time of year? Or are you like past me and would never take any time off? If you are like past me I cannot stress enough how important time off is. Honestly, it didn’t really click with me until I was forced to stop because we were shut down for two months due to Covid. After stopping, I realized just how much my brain and body needs that! Plus, I do get two weeks paid vacation which wasn’t an option for me in the past either at my previous employers so I am excited to take advantage!

I just got some new shorts and t-shirts that I am loving - so comfy! I missed shorts. At least, wearing shorts outside that is. I am always wearing shorts around my house. I am a shorts and leggings type of gal. Plus, I am very proud of the tone that I have managed to get back in my legs after getting back into working out! I got some nice and heavy weights. I forgot just how much I love weights! I will never stop again.

Ok, tell me, have you found any awesome new music or great podcasts lately? You know I never stop listening to music and don’t mind a podcast once in a while either! I listen to all kinds of music and love a good serial killer podcast, please tell me you also listen to the serial killer podcasts! I actually don’t really know of any other podcasts, so if you have a good suggestion let me know - I love to laugh so keep that in mind! As for music, again, I will listen to pretty much anything depending on my mood.

Ok, so the trick to making these awesome blueberry muffins is making sure you toothpick comes out ALMOST clean when you check for done-ness! If it comes out completely clean you run the risk of a dry blueberry muffin and nobody wants that!

These are perfect to bring to your next brunch, breakfast, bring a treat into your office, or just keep them on hand to enjoy yourself whenever you feel!

Healthy Blueberry Muffins

Let’s start our week off the right way with the most delicious bakery style blueberry muffins! Once you try these you will be shocked that they are paleo, have zero added sugar, and are gluten free!

Ingredients

  • 2 cups almond flour
  • 1 cup tapioca flour
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 5 tbs stevia or monk fruit
  • 1 ripe banana, mashed
  • 3 eggs
  • 1/3 cup unsweetened almond milk
  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Preheat oven to 325 degrees F. Grease or line a standard 12 cup muffin tin and set it aside.
  2. In a large bowl, place your almond flour, tapioca flour, baking soda, sweetener and salt. Whisk until well combined and create a well in the middle. Set aside.
  3. In a medium bowl mix together your mashed banana, unsweetened almond milk, and eggs until combined. Pour into the center of your flour mixture and mix together until smooth and there are no chunks lefts. Mix in your blueberries.
  4. Divide your blueberry muffin batter evenly among your prepared muffin tin. Each cup should be about 3/4 full. Place in the center of your preheated oven and bake for 27-30 minutes, or until a toothpick inserted in the middle of a muffin comes out ALMOST clean. Allow to cool and enjoy!
