Healthy Low Carb Brookies

If you haven't tried these Brookies yet, you are missing out on what is the fudgiest and easiest cookie ever! Flourless, sugar free, paleo and ready in as little as six minutes and baked with less than ten ingredients.

Ok, so you need to be very careful NOT to overbake these brookies! They should still be very soft when you take them out of your oven and will stiffen up as they cool, but don’t worry they will still be sure soft and fudgy! If you overbake these Brookies they will get hard and we do not want that! Although, they would still taste delicious.

What makes these Brookies even BETTER you ask?! Well, they are SUPER easy to make, are ready in LESS than 15 minutes, AND each cookies comes in at only 134 calories, three grams of net carbs, and five whole grams of protein! WOOHOO! I seriously can’t get enough of these Brookies - I think I officially have a new favorite cookies, I could easy eat the entire batch. These cookies are perfect to keep on hand in your kitchen for whenever that sweet tooth hits, they are healthy enough to bring to your next brunch, or impress your coworkers by bringing in a batch to work. Anyone that you make these Brookies for will NOT believe you when you tell them they sugar free AND keto!

As you guys know, I am still on my extra long weekend because I decided to take my two flex days so create a nice long weekend for myself, since I also lose them at the end of June. I could not have asked for better weather to be off, or a better cookie to have on this wonderful Monday - I am excited for my four day work week ahead! I need my boyfriend to hurry up and come home so I don’t eat this entire batch of cookies. I may just have to make some Brookie deliveries to my family!

What are you guys up to this upcoming week? I mean, besides make yummiest Brookie in the world? Today I am just doing my regular Sunday things, which is groceries, meal prep and laundry. I will get my dog, Bo, out for a nice walk today and probably fit in a workout with my weights - I am very into weights lately! Do you have any pets? I have a dog and a cat who get along amazingly. My cat is a black and white tuxedo cat and my dog is some kind of German Shepherd mix, a mutt really. They are both rescues so who knows what kind of breed they really are, all I know is that they are both the lights of my life! Let me know if you have pets and PLEASE show me pictures - I LOVE to see photos of everyone’s pets. But you also need to be ready for me to show you mine, and you will need to get ready because I have fully albums on my phone dedicated to each one! These Brookies were a real winner with my boyfriend, and honestly a real crowd pleaser. They are kid and adult approved, if any person tells you they don’t like them then they are LIARS. Seriously. And I know that I say the flaky sea salt on top is optional but I really do recommend sprinkling just a little bit on top - it enhances the chocolate flavor SO MUCH. I used to be one of those people who never added salt to my baking - I never got the point. As I have grown and learnt more about baking I have since learnt to (almost) always add even just a touch of salt to your baking because salt is a flavor enhancer and my baking just got that much better - don’t worry though! The extra sea salt on top of these Brookies does NOT make these salty, in fact it makes them just perfect. Ok, so to summarize this entire post - or TLDR: Show my all of the pictures of your pets, of all breeds and types. And take pictures of your Brookies and show me! I LOVE seeing pictures when you guys make my recipes, I am serious when I say nothing warms my heart more. I mean, besides seeing photos of your animals.

Ingredients

  • 1 cup natural almond butter
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp olive oil
  • 1/2 cup golden monk fruit
  • 1/3 cup cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar free chocolate chips
  • optional, but recommended: flaky sea salt for topping

Instructions

  1. Preheat your oven to 350 degrees F. Line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a large bowl mix together your almond butter, eggs, vanilla extract, olive oil, and golden monk fruit until smooth.
  3. In a medium bowl whisk together your cocoa powder, baking soda, and salt. Pour your cocoa mix into your almond butter mix and whisk together until a smooth dough forms. Fold in your chocolate chips.
  4. Using a tbs to measure your cookie dough, roll your dough into balls and place on your prepared baking sheet. Each ball should be about 1 1/2 tbs. Flatten dough ball slightly with your hand, they should be about a 1/2 inch thick.
  5. Optional: place a little bit of extra chocolate chips on top and sprinkle with flaky sea salt.
  6. Bake in your preheated oven for 6-8 minutes. DO NOT OVERBAKE. Allow to cool for at least 15 minutes and enjoy!
