Deliciously soft, thick and chewy coffee-infused cookies that are loaded with chocolate chips and coffee flavor. This recipe has zero sugar, is gluten free, and keto friendly. The joy of this recipe is that you can use your favorite coffee, I used ground hazelnut coffee beans and let me tell you, these cookies are to DIE for! The best part of this is also that you can use a smaller amount of ground coffee for a light taste, or you can use more to have a really impactful coffee flavor, customize this cookie to your tastes! I recommend anywhere from 2 tbs to 4 tbs but you can also use more or less - don't let anyone tell you how much coffee you can or cannot have!
You should also make sure to cream together your butter and monk fruit for at least seven or so minutes, until your butter is nice and fluffy - this is a really easy technique to ensure delicious cookies every time! I usually cream my butter and sweetener together while I get everything else ready. This way, you don't need to stand around doing nothing while your butter creams. Seriously - just do it! What makes these cookies just that much better is that each coffee infused cookie comes in at only 96 calories, just two grams of net carbs, on almost zero sugar! I mean, C'MON! Does it get any better? For a COOKIE? Nope. I hope you love this recipe as much as I do!
