Healthy Sugar Free and Gluten Free Chocolate Chip Pancakes


Thick and fluffy chocolate chip pancakes! You guys…. these are HANDS DOWN the BEST pancakes I have EVER had! Even better then the gluten and sugar filled pancakes of my past. I am still in awe of this magnificent stack of pancakes. This pancake recipe is very easy to make and SO worth it! You can even double this recipe for a breakfast meal prep, just freeze them and pop them in the toaster when you are ready! Now that is a guarantee that you will have a good week if you have chocolate chip pancakes ready to go at any time! You can even top these with sugar free syrup to keep your sugar to a minimum because we all know that there is plenty of added sugar in everything else that we will eat in a day, no need for a sugar crash from your pancakes!

What makes these delicious and fluffy pancakes that much better is that each thick pancakes has only 152 calories, just eight grams of net carbs and six whole grams of that amazing thing that we call protein. What a great way to start your day! I made eight pancakes with this recipe - so depending on how many you make your nutrition facts can vary but I thought the size of mine was just perfect. These pancakes are totally adult and kid approved!

A trick that I find works really well if you do not want soggy pancakes - and this goes for any pancake recipe - is that while you are cooking your pancakes, place your already cooked pancakes in a wire cooling rack and they will not get soggy at all! This little trick ensures that your pancakes stay perfect, this also works for any waffles that you might be making. ALSO, do NOT skip the apple cider vinegar (or ACV) in this recipe - that is what helps your pancakes to rise for a nice thickness to your chocolate chip pancake. You could also technically use almond milk instead of coconut milk if that is all you have, but I HIGHLY recommend using the full fat coconut milk, the stuff that comes in a can. It honestly makes a world of difference in my books!

I love to prep these pancakes and keep them in my freezer, seriously they freeze very well and you just heat them up by popping them in your toaster - they make for the perfect quick breakfast if you are in a hurry to get going. I like to keep them in my freezer especially for those weekend morning when I don’t always feel like cooking, mostly because I spent the entire night before testing out and creating new recipes for you guys. So to have a delicious chocolate chip pancake just waiting for me to heat it up is amazing. These are perfect for breakfast, or even lunch and dinner! Healthy Sugar Free and Gluten Free Chocolate Chip Pancakes

The best pancakes I have ever had, hands down! Even better then the gluten and sugar filled pancakes of my past. This delicious stack of pancakes is gluten free, sugar free, and paleo.



  • 1/2 cup almond flour
  • 1/3 cup tapioca flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking soda
  • 2 tbs stevia or monk fruit
  • 4 large eggs
  • 1/4 cup full fat coconut milk
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1/2 cup sugar free chocolate chips


  1. In a large bowl mix together all of your flours, baking soda and sweetener.
  2. In a medium bowl whisk together your eggs, coconut milk, apple cider vinegar and vanilla until well combined.
  3. Pour your wet mixture into your dry mixture and whisk until well combined, fold in your chocolate chips.
  4. On a preheated griddle over medium high heat, scoop your batter into your desired size of pancake and cook for 3-5 minutes on each side. Enjoy!
