Healthy Chocolate Covered Strawberries

All you need is 3 ingredients (4 including the strawberries) to make these SUPER EASY and totally DELICIOUS chocolate covered strawberries! these are the absolutely perfect treat for Valentines day! But, let’s be honest here though…. chocolate covered strawberries are the perfect treat and pick me up for literally any day! I have given two ways to make this recipe and both are equally as delicious and easy!

I have always loved chocolate covered strawberries, but haven’t actually had them that much. I guess I always thought that chocolate covered strawberries need an occasion to go with. But, in reality you can whatever you want, whenever you want - don’t let anyone tell you otherwise! The last time I actually ate chocolate covered strawberries was quite a few years ago when my boyfriend got some delivered to my work on my birthday, I was SO excited! Funny story though, the place that delivered them actually did not put any note saying who they were from - so I posted on Facebook asking who had sent me chocolate covered strawberries (since my boyfriend has never done anything like that before) and my older brother, who was travelling in Thailand at the time, commented and (jokingly) tried to take the credit for them - I had a good laugh! My poor boyfriend commented saying that he thought they would at least write his name on the box or something. Either way, I LOVED getting them! I popped them in to my fridge at work and ate some at lunch, shared some with my co workers, and then happily brought them home.

I actually was very impressed at how comparable these healthy and zero added sugar chocolate covered strawberries turned out! They tasted SO good - just like the sugar filled chocolate covered ones! I have decided that I can now have chocolate covered strawberries on any old regular day because they are delicious, so why not? These are, however, the perfect Valentines treat! That is why they are my delicious Valentines recipe this year! These are VERY easy to make - just as simple as melting regular chocolate and dipping a strawberry in it. Just dump all of your ingredients in to your pot and melt, then dip your perfectly ripe strawberries in! The chocolate actually hardens pretty quickly - so there is barely even a wait to eat them!

What is your favorite kind of chocolate dipped fruit? The nice thing about this chocolate dip is that you can dip any fruit that you like in it - so go ahead and get to dipping! Ok, I have babbled on for long enough and I know that  you need to get these delicious and easy Healthy Chocolate Covered Strawberries in your mouth and tummy so let’s get started!

Healthy Chocolate Covered Strawberries

The healthiest chocolate dipped strawberries around town! I still cannot believe that these are made with all natural ingredients, sugar free AND only 30 calories each! I have outlined 2 ways to make this super easy recipe!

Ingredients

Option 1:

  • 1/4 cup cocoa butter
  • 3 tbs cocoa powder
  • 1 1/2 tsp stevia or monk fruit
  • about 20 strawberries

Option 2:

  • 1 cup sugar free chocolate chips
  • 1 tsp coconut oil
  • about 20 strawberries

Instructions

Option 1:

  1. Melt the cocoa butter in a heatproof bowl set over a pot of simmering water. The bottom of the bowl should not touch the water.
  2. Once melted, add in your cocoa powder and sweetener and mix until smooth. Allow to cool for a few minutes.
  3. Using your strawberries, dip one by one into the chocolate mixture and set on a baking pan that is covered with either parchment paper, wax paper, or a silicone baking mat to set. Enjoy!
  4. Store in the fridge.

Option 2:

  1. In a microwave safe dish, melt your chocolate chips and coconut oil in 30 second increments, stirring in between until melted and smooth.
  2. Using your strawberries, dip one by one into the chocolate mixture and set on a baking pan that is covered with either parchment paper, wax paper, or a silicone baking mat to set. Enjoy!
  3. Store in the fridge.
