Happy New Year everyone! Cheers is to a happy and healthy 2022! I know we have to start our year off right with a delicious and healthy cinnamon swirl bread - I cannot get enough of this recipe, it has very quickly become one of my favorite recipes. I just know it will become one of your favorite too! Each loaf comes in at only 153 calories, six entire grams of protein (yes please!), only three grams of net carbs, and LESS than one gram of naturally occurring sugar - wooohooo! This recipe will help you keep on a healthy track for 2022.

Are you a New Years Resolution type of person or not? To be honest, I never really have been. Not that it is a bad thing to do - I think it is great to make one, I have just always been the type of person to set a goal whenever I need too, not necessarily just at the begging of a new year. If I have a goal in mind why not start right away instead of putting it off for a month or two just to have a 'fresh start?'. Ingredients

  • 2 1/2 cups almond flour
  • 2 tbs coconut flour
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/2 cup granulated sweetener of choice
  • 1/2 cup almond milk
  • 2 large eggs

Cinnamon Swirl:

  • 2 tsp ground cinnamon
  • 1/4 cup granulated sweetener of choice (my preference for this one is monk fruit)

Instructions

  1. Preheat oven to 350 degrees F and line a 8x4 loaf pan with parchment paper or spray with non stick spray. Set aside.
  2. Make the cinnamon swirl by mixing ingredients together. Set aside.
  3. In a medium bowl, combine the almond flour, coconut flour, salt, cinnamon, baking soda, and sweetener. Stir to combine. Add in the almond milk and eggs. Mix until no dry spots remain. Pour half of the mixture into the prepared pan. Sprinkle about 2/3 of the cinnamon sugar mixture on the dough. Cover with the remaining dough and top with the remaining cinnamon sugar mixture. Bake for 45-50 minutes, or until a toothpick inserted in the middle of loaf comes out clean. Allow to cool for at least 20 minutes before removing from pan, enjoy!
