These are truly the best Easy Fluffy Low Carb Pancakes With Almond Flour! They are thick and fluffy and made with no added sugar. No other recipes can stack up to these almond flour pancakes

I am currently OBSESSED with these healthy keto pop tarts for breakfast, and of course these pancakes! This recipe is amazing topped with sugar free strawberry jam! Names something better than a giant stack of pancakes on a Monday morning..... you can't, can you!? Yeah, me neither. I made these pancakes into a strawberries and cream combo but you can make them whatever you please! I actually find some sugar free syrup that I have yet to try and these pancakes stacks give me the PERFECT excuse to use it! Let's get this show on the road and get to makin' a big ole stack of pancakes!

Ingredients in homemade pancakes:

  • 1/2 cup almond flour
  • 1/3 cup tapioca flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking soda
  • 2 tbs stevia or monk fruit
  • 4 large eggs
  • 1/4 cup full fat coconut milk
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract

How to make pancakes:

  1. In a large bowl mix together all of your flours, baking soda and sweetener.
  2. In a medium bowl whisk together your eggs, coconut milk, apple cider vinegar and vanilla until well combined.
  3. Pour your wet mixture into your dry mixture and whisk until well combined.
  4. On a preheated griddle (sprayed with non stick spray) over medium high heat, scoop your batter into your desired size of pancake and cook for 3-5 minutes on each side. Enjoy!
