Both these keto recipes go perfect with this peach cobbler: vanilla ice cream and chocolate ice cream. Just place a scoop right on top of your warm cobbler and let it melt in - absolutely delicious! This peach cobbler recipe is perfect for this upcoming mothers day for a nice light dessert or part of a fun brunch! This recipe can be made with fresh, canned, or frozen peaches - just let them thaw first and make sure your canned peaches are not in sugar syrup (if you are limiting your sugars). This recipe is always a serious hit everywhere I bring it and it is so quick and easy to whip up!

Instructions to make keto peach cobbler:

  1. Preheat oven to 350 degrees F. Grease a round 9-inch pie dish with non stick spray and set aside.
  2. In a large mixing bowl, combine the fresh peach slices with monk fruit and xanthan gum.
  3. Arrange the peach slices into a single layer in your baking dish. Set aside on the counter while you are making the cobbler biscuit.
  4. In another mixing bowl, whisk together the almond flour, coconut flour, monk fruit, salt, cinnamon and baking powder.
  5. Stir in beaten egg, melted butter, almond milk, and vanilla extract, until it forms a thick creamy biscuit batter.
  6. Spoon the batter roughly onto the peaches.
  7. Bake for 35-40 minutes in the center rack of your oven. I recommend you cover the baking dish with a piece of foil if the top starts to brown too fast. It is ready when the top of the biscuit is golden brown, and the peaches form a jam-like texture, and bubbles show on the side of the baking dish.
  8. Cool 5-10 minutes then serve in individual bowls or plates. Enjoy!
