Gluten and Sugar Free Edible Cookie Dough

Cookie dough that is safe to eat. Need I say more? It tastes just like classic cookie dough but is paleo, gluten free, and has a dairy free option which would also make it vegan. Absolutely delicious and ready in 5 minutes! This has probably become one of my favorite desserts to keep on hand - as it refrigerates and freezes very well! I actually prefer it when it has sat in the fridge for at least 20 minutes. Now you can enjoy the best part about making cookies without risking salmonella, because who has the time for that? Honestly, I also enjoy this recipe when it has been frozen. Just roll it into a cookie dough ball and freeze it - delicious and perfectly portioned!

This recipe is great because you can adjust the sweetness and consistency as you make it to make this recipe exactly how you would want your cookie dough to taste. I don't know about you, but I always eat the raw cookie dough when I bake cookies. Every. Single. Sime. Which is a lot in my household, as I am sure you can tell. I did as a kid and I still do to this day. Is that bad? I mean, I know that it is bad as in what you can get from eating it raw. But nothing has ever happened to me, so I am not very deterred from eating it. Have you ever had any adverse effects from eating raw non edible cookie dough? I have always had an iron stomach, nothing upsets my tummy so maybe I am just lucky? My boyfriend does not try the raw non edible cookie dough because he knows you are not supposed to. Or maybe it is because he has had an upset tummy from it? I should ask. And I know that I am not supposed to eat it raw too, but I just can’t help myself! I just don’t always have time to wait for my cookie dough to become a fully baked cookie! Which was really my motivation to make edible cookie dough! Yummy yum. You could even freeze this edible cookie dough in chunks and throw it into your ice cream for a better for you version of cookie dough ice cream!

I also think I need to work on a homemade sugar free and dairy free ice cream. I think my next purchase will be an ice cream maker. Lord knows I need to have that on hand! I usually try to buy the ‘healthier’ ice cream at the store, but am always just a little disappointed when I read the ingredients and nutrition facts, and it really isn’t good for you, just good marketing. Don’t get me wrong, I am fully aware that ice cream is a delicious and indulgent treat, and I eat it all the time. But, you all know in my head I always want to find a way to make it more nutrient dense, healthy, and oh so delicious! We need happy tummy’s, not upset tummy’s!

Ok, now I am thinking about cookie dough ice cream…yum! Although, that is not the kind of ice cream that I usually buy - I usually get mint chocolate! Yummy! This is the one thing that I actually love about writing these blog posts, first, I get a lot of ideas for my next creation. And second, I always get know you more - which is so amazing to me. ALSO, you only need ONE bowl to make this edible cookie dough!! It seriously cannot get any better than this! Next time I make this I am going to make it completely sugar free so make sure to keep an eye out for that - as long as it works out and is totally delicious I will also share that recipe with you!

Ingredients


  • 1 cup almond flour
  • 1 1/2 tbs coconut flour
  • 1/4 cup monk fruit 
  • 1/4 tsp salt
  • 3 tbs almond milk
  • 2 tbs melted unsalted butter or melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 cup sugar free or dairy free chocolate chips

Instructions


  1. Put all of your ingredients in a large bowl (except for chocolate chips) and mix until well combined.
  2. Fold in your chocolate chips and enjoy!
