When it comes to easy and healthy breakfast or brunch recipe I love these sugar free chocolate chip pancakes I also especially love a delicious healthy muffin, and of course, this perfect cinnamon waffle. Let's be honest though, anything topped with fruit and whipped cream is going to be a winner in my book! You can even make a dairy free and sugar free topping with this recipe for dairy free sure free whipped cream.

Ingredients in a Healthy Cinnamon Waffle

  • 3 large eggs
  • 1 cup almond milk or your milk of choosing
  • 2 tsp vanilla extract
  • 1/3 cup sugar free brown sugar replacement
  • 2 cups almond flour
  • 1/4 cup tapioca flour
  • 1 tsp baking soda
  • 2 tsp ground cinnamon

Delicious ways to enjoy a cinnamon waffle

  1. Topped with fruit and/or whipped cream - duh!
  2. Sprinkled with a cinnamon 'sugar' mix
  3. Sugar free maple syrup and warm butter
  4. Dice apples and put them right in your batter for a apple cinnamon waffle
  5. Top with cream cheese icing for a cinnamon roll waffle

Instructions to make a Healthy Gluten Free Cinnamon Waffle:

  1. Plug in your waffle maker to heat it up.
  2. In a large mixing bowl, whisk together your eggs, almond milk, vanilla extract, and brown sugar replacer. Set aside.
  3. In a separate medium bowl, whisk together your almond flour, tapioca flour, baking soda, and ground cinnamon until combined.
