Luscious and incredibly delicious, this easy recipe will instantly put you in a holiday mood. This recipe has a dairy free option, is sugar free, and keto friendly - now that is something to celebrate this Christmas season! I am not going to lie - I LOOOVE Eggnog! Eggnog never lasted long in my house between me and my siblings, but we did have to cut it with half a glass of milk to make it last as long as possible. Once it was out, it was out! Now, I do not cut my eggnog with anything (except maybe rum) and let me tell you, I am living my BEST life during the holiday eggnog season. Especially since my spouse does not like Eggnog - I get it all to myself! Of course, you all know me, I just had to figure out how to create a healthy version for everyone with dietary restrictions to enjoy. So, I have done just that! This healthy version of Eggnog can be dairy free, is sugar free, and keto friendly coming in at only 2.5 grams of net carbs! I mean... seriously! Your thinking it can't be as delicious as the original, right? WRONG. It is JUST as delicious - if not better because I drink way more of it!

What makes this recipe SOOO amazing you ask? Well, let me tell you! Each dairy free serving comes in at only 83 calories, 2.5 grams of net carbs, 4 entire grams of protein, and only 2 grams of natural sugar! Each serving if NOT dairy free comes in at only 176 calories, 0.5 grams of net carbs (!!), and 0 (!!) grams of sugar! WOOOHOOOOO! No matter which option you go with, dairy free or not, you can't get any better than those macros! I seriously cannot wait for you to try this recipe - I can't get enough of both the dairy and dairy free versions! Of course, this is without any alcohol so if you are tracking this kind of stuff and add in some booze - make sure to add that in as well!

Ingredients

  • 5 egg yolks
  • 1/3 cup monk fruit
  • 2 cups unsweetened almond milk
  • 1 cup heavy whipping cream or full fat coconut milk
  • 1 tsp nutmeg
  • 1/2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • Optional: 3/4 cup dark rum (or more)
  • Optional: whipped cream, ground cinnamon or nutmeg sprinkled on top

Instructions

  1. Place your egg yolks into a bowl, Add the monk fruit and whisk until creamy and frothy. Set aside.
  2. Pour the almond milk into a saucepan. Add the cream (or coconut milk), nutmeg and cinnamon. Bring to a boil over a high heat. Once foam starts to form, take off the heat.
  3. While the milk is still hot, use a ladle to slowly temper the hot almond milk and cream mixture into the egg yolk and monk fruit mixture. Keep whisking constantly or the mixture will curdle! When you have added about half of the almond and cream mixture, return everything into the pot with the remaining almond and cream mixture, whisk vigorously and cook until it reaches 160 degrees F (should take about 6-8 minutes).
  4. Remove from the heat and strain through a fine mesh sieve into a medium mixing bowl. Add the vanilla extract and optional dark rum. Set your bowl in the refrigerator to chill to chill and Enjoy! Serve cold.
