INGREDIENTS YOU NEED

  • 1 cup almond flour
  • 3 tbs coconut flour
  • 1/3 cup sugar
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1 large egg
  • zest from 2 limes
  • 1 tbs fresh squeezed lime juice
  • 1/2 tsp vanilla extract
  • 1/4 cup melted butter or coconut oil for dairy free

Glaze:

  • 1/4 cup powdered sugar
  • 1 tsp fresh squeezed lime juice
  • water, added by the tbs

Instructions To Make Gluten Free Key Lime Cookies

  1. Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper or a silicone baking mat.
  2. zest and juice your lime(s) and set aside.
  3. In a large bowl, whisk together your almond flour, coconut flour, sugar, salt, and baking soda. Mix in your lime zest.
  4. In the same bowl, mix in your egg, lime juice, vanilla extract, and melted butter or coconut oil. Mix until well combined and you have a dough formed.
  5. Drop your dough on your prepared baking sheet by the tbs, roll into a ball and slightly flatten.
  6. Bake for 10 minutes and allow to cool in the baking sheet for at least 5 minutes before transferring them to a cooling rack.
  7. While your cookies cool, make your glaze by adding in your powdered sugar and lime juice in a small bowl, slowly add in water by the tbs and mix until you have a dippable consistency.
  8. Once you cookies have completely cooled, dip the tops of them in your glaze and enjoy!

    Keto friendly with monk fruit alternatives.

    Great recipe for me to use up some of my limes! I’m curious, are the cookies soft or more on the crisp side? For some reason I thought they were crisp and mine are soft. Still very delicious, but I know I baked them a few minutes longer. I also wonder I didn’t press them down enough. I added 1 T of water and it seemed a bit watery, which I corrected with a bit more powdered sugar and then lime juice to set off the extra sweetness.
