Low Carb Sugar Free 3 Ingredient Peanut Butter Cookies

The best ever quick and easy Low Carb Sugar Free 3 Ingredient Peanut Butter Cookies ever! These low calorie melt in your mouth soft peanut butter cookies only take 15 minutes to whip up!

I am on a cookie and am obsessed with sugar free monster cookies, oatmeal cookies, and of course this recipe for the easiest keto peanut butter cookies ever! These are my boyfriends most favorite cookies ever, and I can't blame him! Usually when I make these they last a day - maybe two once he knows that I have made them, he can barely wait long enough for them to cool enough to eat! You can imagine that when I made these it was almost unbearable for him to wait until I was done taking photos. The tough life of a spouse to a food photographer. I don't mind making them at any time though because they are so easy and I always have these incredibly basic ingredients in my kitchen.

Ingredients in Low Carb Sugar Free 3 Ingredient Peanut Butter Cookies:

  • 1 cup smooth natural peanut butter
  • 1 cup granulated sugar free sweetener of choice (I used swerve)
  • 1 large egg

How to make peanut butter cookies:

  1. Preheat oven to 325 degrees F, line a large baking sheet with parchment paper and set aside.
  2. In a large bowl, mix together your peanut butter, sweetener, and egg until very well combined.
  3. Scoop out a tbs of dough and roll it into a ball. Place the cookie balls onto your prepared baking sheet.
  4. Flatten your peanut butter cookie balls by pressing a fork down on top of them, then press it down again make a criss-cross pattern.
  5. Bake for 10-12 minutes or until the edges are JUST starting to brown.
  6. Remove from the oven and allow to cool for at least 10 minutes before removing them from baking sheet, enjoy!
