Easy Healthy No Bake Keto Gluten Free Chocolate Chip Cookie Dough Bars with a Vegan Option

Super easy and incredibly yummy Healthy No Bake Keto Gluten Free Chocolate Chip Cookie Dough Bars that come together in less than 10 minutes! Vegan option available.

I am currently obsessing over these two other healthy desserts, Strawberry Jello Parfait and this Healthy Shamrock Shake, and OF COURSE these super easy no bake chocolate chip cookie dough bars! They are SO easy to whip up and keep on hand in your fridge ready to eat at any given moment. This recipe is a real crowd pleaser and you could have it whipped up in less than 10 minutes - does it get any better than that? Don't think so!

Ingredients in Sugar Free Cookie Dough Bars

Cookie Dough

  • 1 1/2 cups almond flour
  • 2 tbs powdered monk fruit or powdered sweetener of choice
  • 1/8 tsp ground cinnamon
  • 2 tbs melted butter or coconut oil
  • 1 tbs almond butter
  • 1 tbs vanilla extract
  • 1/3 cup sugar free chocolate chips

Chocolate Topping:

  • 3/4 cup sugar free chocolate chips
  • 2 tbs coconut oil

Instructions to make these Refrigerated Cookie Dough Bars:

  1. Line an 8x8 dish with parchment paper and set aside.
  2. In a large bowl whisk together your almond flour, powdered sweetener, and cinnamon.
  3. In a separate bowl mix together your melted butter or coconut oil, almond butter, and vanilla extract. Pour mixture into your flour mixture and mix together until well combined and there are no more dry spots. Fold in 1/3 cup of your chocolate chips.
  4. Press dough into your prepared dish, make sure dough is evenly distributed. I found a rubber spatula the easiest for this.
  5. In a microwave safe dish, microwave your chocolate chips and coconut oil in 30 second blasts until melted. Pour over your cookie dough.
  6. Refrigerate for at least an hour, or overnight. Cut into equal squares and enjoy!
