Healthy Vegan Sugar Free Peppermint Chocolate Fudge

Ingredients

  • 1 1/2 cups sugar free chocolate chips of your choice
  • 3/4 cup natural smooth almond butter
  • 1/2 to 1 tsp peppermint extract, to taste
  • 1/2 tsp vanilla extract

Instructions

  1. Line an 8 inch loaf pan with wax or parchment paper, set aside.
  2. In a microwave safe bowl, melt your chocolate chips and almond butter in 30 second increments, stirring in between until completely melted.
  3. Once melted, mix in you peppermint and vanilla extract. Mix well. You can taste at this point if you would like more peppermint extract.
  4. Pour your fudge into your prepared loaf pan and place in your freezer for 20-40 minutes, or until set. Cut into small squares and enjoy!
  5. To store, place in an airtight container in your fridge or keep them in your freezer - allow to thaw for 10 minutes before eating.
