Easy Gluten Free Keto Baked Vanilla Donuts

These keto donuts taste just like the real thing, just without all the sugar and carbs! They are deliciously moist and melt-in-your-mouth good, with a easy vanilla glaze. That's right, healthy sugar free donuts my friends!

I am obsessed with these other keto donuts recipes: lemon blueberry and strawberry donuts. Of course, this recipe for classic vanilla flavor is AMAZING. So, this is it folks - this is the recipe that started it all. The recipe that started with entire blog and my journey to being a recipe developer/food photographer/blogger. This recipe remains one of mine and my families favorite recipes, I make it pretty often and finally decided to redo the photos and it is so much seeing how far my photos have come. These are literally the first recipe I ever photographed and made back when I had 2 months off work because we had to close. I am very lucky to have unlocked a true passion and fun hobby that I positively love! So, let's get to it - I can't wait for you to try this recipe!

Ingredients in a homemade baked vanilla donuts

  • 1 cup almond flour
  • 1/4 cup monk fruit or granulated sweetener of choice
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup melted unsalted butter
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 2 large eggs

Glaze:

  • 1 cup powdered monk fruit or powdered sweetener of choice
  • heavy cream or water
  • 1 vanilla bean pod (use scraped out vanilla beans) or 1 tsp vanilla extract

How to make sugar free vanilla donuts

  1. Preheat your oven to 350 degrees F and grease your donut pan very well. It is easiest to use a silicone donut pan.
  2. In a large mixing bowl you will whisk together your almond flour, monk fruit, baking powder, and salt until well combined.
  3. In a separate medium mixing bowl mix together your malted butter, almond milk, vanilla extract, and eggs.
  4. Pour your wet mixture into your dry mixture and stir until well incorporated - you should have no clumps left. Transfer your batter into your donut pan. Each cavity should be 3/4 full.
  5. Bake in your preheated oven for 16-18 minutes or until golden brown. Once out of the oven, let cool COMPLETLEY before removing from your donut pan.
  6. Let’s make our donut glaze! Mix together all of your glaze ingredients, adding in your cream or water by the tbs until a dippable texture is achieved.
  7. Once your donuts have cooled, removed them from your pan. Dip your rounded tops into your glaze and place on a cooling rack until your glaze is set and enjoy!

What can I use instead of a donut pan?

If you do not have a donut pan, you can use a muffin tin with a rolled up ball of tin foil in the middle so you can still get that donut hole in the middle!

Do baked donuts taste the same as fried donuts?

The texture is more compact or 'cakey' and the color is also much pale. However, I personally enjoy a baked donut more than a fried one - plus it save calories.
