This refreshing watermelon mint popsicle is completely delicious and incredibly easy to make, once you try it you would never believe that is is vegan, has zero added sugar, is keto friendly, or that it is super low calorie! Whip up these popsicles in no time at all with just 3 ingredients! I do recommend trying your liquified popsicle before adding in any extra mint, or sweetener. That way, it will taste exactly how you like it! If you get a sweet enough watermelon you may decide that you don't even need any extra sweetness in this recipe, I recommend doing a quick google search on how to pick the perfect watermelon so you can get exactly what you want out of this watermelon mint popsicle recipe.

I know, you are asking me what makes these watermelon mint popsicles so delicious and healthy? Well, let me tell you! Each watermelon mint popsicle comes in at ONLY 33 calories... for an ENTIRE popsicle!!! This recipe has two grams of wonderful protein, just one gram of fat, and ONLY four grams of net carbs! Wooooohooo! Name a better summer popsicle.... I will wait. YOU CAN'T now can you?! Didn't think so. Watermelon has always been one of my favorite fruits, hands down. I have loved it my entire life! I adore when I have some fresh cut up watermelon ready to be eaten at anytime in my fridge. speaking of which, this recipe gave me and excuse (not that I need an excuse) to buy a nice, sweet, and juicy watermelon. I am eating a few slices as I write this and am LOVING it!

I am having so much fun lately getting my creative juices flowing by coming up with some new, delicious, and nutrient dense summer recipes! Plus, it gives me something to look forward to on these plus 30 degrees C days in the hot sun when I ride my bike home from my 9-5 job this gives me something delicious, exciting, and refreshing to come home to! And let me tell you - those bike rides have been HOT this summer, I am loving it! I can ride my bike to work in about 10-15 minutes, or sometimes I walk of my boyfriend is going to pick me up after work which takes me about 35 minutes. Honestly, I love getting in that cardio before work - it really wakes me up and I am ready to go for the day! Plus, I have only fell on my bike once this summer! If you happen to know me, and how clumsy I am, this is a pretty special achievement! PLUS, the fall wasn't even my fault, which makes it better too. I was riding and coming up on a pedestrian (I ride on the sidewalk), I rang my bell multiple times and they did not hear me so I rode on the grass to get around them, and as I was getting back on the sidewalk my bike tire hit the edge of the sidewalk weird and down I went. I swear pedestrians NEVER hear my bell, I am not sure what it is! I understand the ones that have headphones in, because I wouldn't hear a bell if I had my headphones in either - I like to blast my music. But most of the people I have to go around don't have headphones in and don't hear my bell, they must just be off in their own little worlds. Which is also fair. Does anyone else that rides their bike have the same issue with people hearing your bell? Please tell me I am not alone.

Ok, I am not going to lie - frozen treats can be pretty difficult to photography, especially on hot days! Everything melts very quickly. However, these popsicles have been my favorite ones to photograph out of all of the popsicle recipes yet! I just loved the colors I got from the watermelon and the pop of fresh green colors from the mint leaves - SO pretty! I mean, you have got to admit - these colors are SO pretty and just so perfect for a summer recipe! You know I had to immediately eat one of these popsicles the second I was done taking photos, how could I not?! I mean, watermelon and AMAZING and mint is one of my favorite flavors too. So when this idea for a popsicle popped into my head I wrote it down right away so I would not forget and was so excited! I think I may need to keep these on hand year round. Plus, now I have delicious fresh mint on hand for whenever I need some too! Perhaps I will incorporate it into another recipe, I know something will come to me! If you have any suggestions for popsicle flavors let me know! I just might create a healthy and more nutrient dense version just for you! I am having a great time making popsicles right now, plus they are very much needed to cool down in this amazing and gorgeous summer I am having here!

Ingredients

  • 1 cup full fat coconut milk
  • 1 cup chopped fresh watermelon
  • 1-2 tsp fresh mint leaves, chopped
  • optional: 1 tbs liquid or powdered stevia or monk fruit

Instructions

  1. Place all of your ingredients into a blender and blend until nice and smooth.
  2. Pour liquid mixture into your popsicle mold, and place in your freezer until frozen and enjoy!

Note: If you are using powdered sweetener, I use a coffee bean grinder to powder my sweetener.
