Gluten Free and Sugar Free White Chocolate Blueberry Scones

Delicious, light, fluffy, and moist White Chocolate Blueberry scones. You won’t believe that these are gluten free, sugar free, low carb or paleo! I know we need to start this week off right with some delicious scones because it is officially the last few days of August...Nooo! How I have loved the beautiful weather we have had this entire summer. Usually we get a decent amount of rainy days but this year was hot and dry, and I'm not going to lie - I loved it. That being said, these delicious White Chocolate Blueberry Scones will keep me going throughout the rest of the week. Luckily we are coming up on a long weekend so we all have that to look forward to (besides eating these delicious scones).

I got the idea for the white chocolate blueberry combo from my sister who just loves same scones that she gets from her morning coffee shop, and this recipe definitely does them justice! As usual, no one believes that my scones are gluten free, sugar free, or low carb which always makes me proud. A lot of scones are pretty dry but not these ones! These have the perfect amount of moisture in them to keep them delicious all week. These White Chocolate Blueberry Scones are each coming in at just 153 calories, five grams of amazing protein, just three grams of net carbs, and two grams of naturally occurring sugar! Wooohoo! This recipe is perfect to add in to your breakfast routine, or bring them to your next brunch - they are sure to please anyone!

I figured I need to use up this fresh fruit that is around before the cold months kick in, so I currently have a lot of blueberries and cherries that I need to use up so if you have suggestions for me let me know! You will see what I have used the cherries for this Friday, so get ready because it is delicious! I will say that one thing that I am looking forward to with the chilly fall season looming over me, is that I LOVE to dress for fall. Which to me is leggings and sweatshirts. I love to crunch leaves and enjoy the smell of the crisp fall air, I mean, who doesn't love that right? I am going to miss wearing shorts and flip flops though and hanging out at the lake using the stand up paddle board to cruise around the water. Oh well, there is always some kind of fun in every season to enjoy! With the hot summer we have had I am hoping that we also have a gorgeous fall that I won't need to wear a jacket when I go for my daily walks outside. Either, all of the rain will hit us now since the summer was so dry or the nice weather will continue into the nest season. Any guesses on what the weather will hold for us?

The fall will be time for me to get back on track with my workouts, I got pretty lazy with them throughout the summer. I would rather enjoy the weather while it is here because it really is only nice here a few months out of the year. So, my five times a week workout fell to the backboard. I probably did about 3 times per week, which is not bad at all, just not what I usually do. I like to workout a decent amount because I have a desk job and I hate that I sit all day! A great workout after work and walking the dog is a great way for me to get my energy out! I dream of the day where I won't have to sit a desk all day long.

Gluten Free and Sugar Free White Chocolate Blueberry Scones

Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup stevia or monk fruit
  • 1/2 tsp baking powder 
  • 1/4 tsp salt
  • 1/4 cup full fat coconut milk
  • 2 tbs coconut oil, melted
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup blueberries
  • 1/2 cup sugar free white chocolate chips

Instructions

  1. Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together your almond flour, coconut flour, sweetener, salt and baking powder until combined.
  3. In a small bowl, whisk together your coconut milk, melted coconut oil, vanilla extract, and egg. Fold your wet ingredients into you dry mixture and mix with a rubber spatula until all ingredients are combined and a dough ball forms. Fold your blueberries and white chocolate chips into the dough. Allow your dough to rest for about 5 minutes to absorb any extra moisture.
  4. Place your dough onto your lined baking sheet and press it into a disk shape that is about 1 inch thick (or 2.5 cm). Cut into 8 wedges and move your wedges about 1 inch apart and bake for 18-22 minutes. Leave for at least 10-15 minutes to cool on the baking sheet before moving to your cooling rack. Enjoy!
