How amazing do these strawberry scones look?! They are so very delicious I could honestly eat the whole batch in one sitting! I slightly revised and updated my original recipe for scones and I think these are absolutely delectable, and these do not require any chilling of the dough so they are SUPER quick and SUPER easy to whip up whenever you feel like it. These strawberry scones are ready in just under 30 minutes! Seriously though - does it get any better than that?!

These strawberry scones are so light and fluffy with the perfect touch of sweetness it is very hard to believe that they are gluten free and sugar free. Make these today and I promise you will have an amazing week with these to look forward to every day! These strawberry scones are the perfect treat, snack, or even enjoy as a dessert if you please! I loved these strawberry scones with some earl grey tea on the side, to die for!

You know I also love an easy clean up so all you need is two bowls, a whisk, and a rubber spatula - all of which I just threw into my dishwasher when I was done and then viola - a clean kitchen! You would never know that I was in there baking up a storm! Your family or room mate(s) will however know that you have been baking in the kitchen when smell the amazing aroma of these strawberry scones and they come looking around to see what you are up to.

Ok, I am totally loving this warmer weather (finally!) and these strawberry scones are just the perfect spring and summer treat with the most amazing summer strawberry flavor! Plus, if you decide to top it with my optional strawberry cream cheese frosting you get even more strawberry flavor! I just used my own homemade strawberry jam to make it - so so so yummy! Plus, then you have fresh and healthy strawberry jam on hand, what could be better?

Ok, so you already know that I have a love that runs deep for bananas - BUT strawberries are a very close second! Have you ever had a PERFECTLY ripe strawberry? I would die for a perfectly ripe strawberry. So sweet and so yummy! I am not going to lie, I immediately ate two of these delicious strawberry scones the second I was done my photos. That is always the hardest part about this job, the fact that I can’t eat any until I have my photos done! You never know how many you will want for your photos! Luckily, you don’t have to take photos so you can eat these when they are still nice and toasty warm from the oven. Yay1

These scones come in at only 150 calories each and only 3 grams of net carbs! Can you believe that?! Plus they have 3 grams of fiber and 4.5 grams of protein to keep you nice and full!

Healthy Strawberry Scones

Delicious, light, fluffy, and moist strawberry scones. You won’t believe that these are gluten free, sugar free, low carb or paleo!

Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup stevia or monk fruit
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup full fat coconut milk
  • 2 tbs coconut oil, melted
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup chopped strawberries
  • 1/4 cup cream cheese, room temperature
  • 1/4 tsp vanilla extract
  • 1 tbs stevia or monk fruit
  • 1 tbs strawberry jam

Instructions

  1. Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together your almond flour, coconut flour, sweetener, salt and baking powder until combined.
  3. In a small bowl, whisk together your coconut oil, coconut milk, vanilla extract, and egg. Fold your wet ingredients into you dry mixture and mix with a rubber spatula until all ingredients are combined and a dough ball forms. Fold your strawberries into the dough.
  4. Place your dough onto your lined baking sheet and press it into a disk shape that is about 1 inch thick (or 2.5 cm). Cut into 8 wedges and move your wedges about 1 inch apart and bake for 18-22 minutes. Leave for at least 10-15 minutes to cool on the baking sheet before moving to your cooling rack and enjoy like that or add the optional topping.
  5. For your topping, mix together all of your ingredients and mix until smooth. Place your cream cheese mixture into a small baggie and make a small cut in the corner so you can pipe as much as you want onto your strawberry scones - or skip that all together and just spread on top! Enjoy!
