They are so very delicious I could honestly eat the whole batch in one sitting! I slightly revised and updated my original recipe for scones and I think these are absolutely delectable, and these do not require any chilling of the dough so they are SUPER quick and SUPER easy to whip up whenever you feel like it. These strawberry scones are ready in just under 30 minutes! Seriously though – does it get any better than that? These strawberry scones are so light and fluffy with the perfect touch of sweetness it is very hard to believe that they are gluten free and sugar free. INGREDIENTS YOU NEED

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup monk fruit or granulated sweetener of choice
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup heavy cream OR full fat coconut milk
  • 2 tbs coconut oil OR unsalted butter melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup chopped strawberries

Glaze:

  • 1/4 cup cream cheese, room temperature
  • 1/4 tsp vanilla extract
  • 1 tbs monk fruit
  • 1 tbs strawberry jam

Instructions to make Keto Strawberry Scones

  1. Preheat your oven to 350 degrees F and line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together your almond flour, coconut flour, sweetener, salt and baking powder until combined.
  3. In a small bowl, whisk together your coconut oil, coconut milk, vanilla extract, and egg. Fold your wet ingredients into you dry mixture and mix with a rubber spatula until all ingredients are combined and a dough ball forms. Fold your strawberries into the dough.
  4. Place your dough onto your lined baking sheet and press it into a disk shape that is about 1 inch thick. Cut into 8 wedges and move your wedges about 1 inch apart and bake for 18-22 minutes. Leave for at least 10-15 minutes to cool on the baking sheet before moving to your cooling rack and enjoy like that or add the optional topping.
  5. For your topping, mix together all of your ingredients and mix until smooth. Place your cream cheese mixture into a small baggie and make a small cut in the corner so you can pipe as much as you want onto your strawberry scones – or skip that all together and just spread on top! Enjoy!
